Lime Lantern Daiquiri – A tantalizing daiquiri recipe made with fresh watermelon, lime juice and BACARDI® Mixers Strawberry Daiquiri mix.

Well summer is here and that means it’s cocktail season! I had some friends over to try out BACARDI® Mixers and man are they awesome! BACARDI® Mixers created a personalized cocktail for me based off a survey I answered for them. The result….the Lime Lantern Daiquiri! This cocktail is sure to take center stage at any party. A lime half is inverted creating a lime bowl for some BACARDI® 151 to rest in. Light it up and let the party begin!

I don’t know how they figured this all out {very scientifically, I’m sure} but those folks at BACARDI® Mixers nailed it with this cocktail! Made with lots of fresh watermelon, lime juice, and BACARDI® Mixers Strawberry Daiquiri Mix – this cocktail is bursting with fresh, fruity flavor. My friends were pretty impressed as well. I heard comments like:

“This is dangerously good!”

“Just give me a straw and a pitcher!”

“What a perfect drink! Slightly sweet and tons of flavor!”

Now you can’t have a party without some yummy food and party favors right? BACARDI® Mixers sent me all kinds of fun stuff for my guests: visors, muddlers, recipe booklets and even coupons so they can recreate this cocktail at home. I served up a balsamic watermelon salad, fresh fruit, cookies, brownies, and veggie crescent bites. Everything was delish! I absolutely loved how easy it was to create unique and creative cocktails for my friends using BACARDI® Mixers.  The flavors are so fresh and really made my job as a hostess so much easier.

We had an awesome party and tried out some other cocktail recipes – so yummy and SO easy with the BACARDI® Mixers. Just put the ingredients in the blenders and zip! Drink up! I love that BACARDI® Mixers are made with real fruit juice – they sure taste fresher than the shelf-stable mixers! I’ve got my freezer stocked with all the yjmmy flavors so I can whip up amazing cocktails whenever the mood strikes or friends stop by.

If you like to try out new cocktails make sure to like BACARDI® Mixers on Facebook where they share cocktail ideas daily! You can also share your own ideas and photos and BACARDI® Mixers will transform them into personalized cocktail recipes like mine! How fun is that??

Ingredients

  • 10 oz Frozen BACARDI® Mixers Strawberry Daiquiri Mix 1 can
  • 1 cup BACARDI® Gold
  • 1 1/2 cups cubed watermelon
  • 1/4 cup fresh lime juice
  • 4 cups ice
  • 3 limes for garnishes
  • 6 tsp BACARDI® 151

Instructions

  • Cut 3 limes in half. Use a citrus press to juice the limes. Reserve the lime shells and juice.
  • Add all ingredients to a blender EXCEPT for the garnishes and blend on high for approximately 20 seconds or until smooth.
  • Pour into six cocktail or martini glasses.
  • Take the lime shells and push them inside out to create a "lime bowl".
  • Float each shell in the center of the glass being careful to keep the lime above the cocktail.
  • Add 1 tsp of BACARDI® 151 to the "lime bowl" and use a long-stemmed lighter to ignite the rum.
  • Dimming the lights will help with the effect.
  • Make sure flames have been extinguished before drinking.
  • Enjoy!

Health & medication restrictions wont allow the alcohol so I was wondering if this drink could taste good without the alcohol?
