5 SECRETS TO GETTING DINNER ON THE TABLE...FAST!

  • Quick and Easy: Ready in just 20 minutes with simple assembly. While the tortellini are cooking, prep the other ingredients and then you’re ready to assemble.
  • Perfect for Parties: Mess-free, portable, and easy to eat with one hand. Kids love these skewers just as much as adults!
  • Customizable: Swap in your favorite meats, cheeses, or veggies to suit any taste. I like to make each skewer unique so that guests can grab the one with their favorites. Some without olives, some with extra artichokes, etc.

Antipasto Skewer Ingredients

Antipasto Skewers are an easy, crowd-pleasing appetizer made with marinated mozzarella, three cheese tortellini, prosciutto, salami, olives, artichoke hearts, and fresh veggies. Let’s take a quick look at what you’ll need for this recipe, and as always, you can find the full printable recipe card at the end of this post:

  • Marinated Mozzarella Pearls: Add creamy, tangy flavor with a burst of freshness. Mozzarella that isn’t marinated can be used instead.
  • Three Cheese Tortellini: Provides a hearty, chewy bite that balances the briny and savory ingredients. Feel free to swap in your favorite tortellini flavor.
  • Prosciutto & Salami: Offer rich, salty, and savory notes for that classic antipasto taste.
  • Quartered Artichoke Hearts: Add a tender, slightly tangy element. If you can’t find quartered artichoke hearts, buy whole and quarter or half yourself.
  • Spinach or Arugula: Brings a fresh, peppery crunch and a fresh element to these skewers.
  • Cherry Tomatoes: Juicy and sweet, adding a pop of color and brightness. Grape tomatoes are also a great option.
  • Kalamata & Green Olives: Deliver briny, tangy flavors that enhance the savory profile. Use your favorite olives!
  • Pepperoncini Peppers: Add a mild heat and tangy zing. Banana peppers are another great option.
  • Basil Leaves (Optional): Fresh, aromatic, and herbaceous, basil adds a love flavor to the appetizer.
  • Balsamic Glaze (Optional): A sweet, tangy finish that ties all the flavors together. Use your favorite store bought balsamic glaze or make your own.

Storage Information

These antipasto skewers are best served immediately but here is the information you’ll need to make them in advance and store leftovers.

  • Make Ahead: Assemble the skewers up to 24 hours in advance. Store covered in an airtight container in the refrigerator.
  • Leftovers: Keep leftover skewers stored in an airtight container in the fridge for up to 3 days.

Variations to Try

These colorful skewers are sure to impress your guests! Loaded with cheesy tortellini, cured meats, briny olives, and fresh veggies, they’re a quick, no-fuss appetizer that’s as delicious as it is beautiful. This recipe is absolutely perfect as written but here are some variations to consider:

  • Go vegetarian and skip the meats and add roasted red peppers or marinated mushrooms for a hearty skewer.
  • Use hot soppressata and spicy pepperoncini to add a bit of heat to these antipasto skewers.
  • Go all in on Mediterranean and add cubes of feta, cucumber slices and sun-dried tomatoes to these skewers.

Can I make these skewers the night before?

Yes! Assemble them up to 24 hours in advance and store covered in the fridge.

How long can the antipasto skewers sit out?

They’re safe at room temperature for about 2 hours. For longer events, keep them chilled.

Are these skewers supposed to be served hot or cold?

The antipasto skewers are meant to be served cold as an appetizer.

What substitutions can I make?

Due to the nature of this recipe, there are many different substitutions you can make, including using a different kind of greens, such as kale, and substituting the salami or prosciutto for a different kind of meat, such as soppressata. Mix and match the order of ingredients for variety.

Trish’ Tips

  • Pat artichokes and olives dry to avoid soggy skewers. I like to drain first and then pat with a paper towel.
  • Folding the prosciutto and salami adds texture and visual appeal.
  • Chill the skewers before serving for a refreshing appetizer on hot summer days.
  • This recipe is easy to double, triple of even halve depending on your needs. You essentially need one of each item for each skewer so it’s easy to make as many or as few as you need.
