Ingredients:
1 lb breakfast sausage
1 lb bacon
1 cup chopped ham
2 pound of red potatoes, cubed into bite size pieces
16 oz cheese (any kind you like)
24 soft taco tortillas (I used flour)
12 eggs, extra large
1/2 c milk
1/3 c olive oil
1 tsp each: Emeril's Seasoning, Seasoning Salt or any seasoning you prefer
salt and pepper
Meats:
1. Cook bacon. (see my post on How To Bake Bacon)
2. Brown the sausage.
3. Fry up the ham.
1. Preheat oven to 450 degrees.
2. Dry cubed potatoes with a towel to eliminate any extra water.
3. Toss the potatoes with 1/3 c olive oil, 1 tsp salt, 1/2 tsp pepper. Use additional seasoning (such as Emeril's or Seasoning Salt) if desired.
4. Roast for 30 minutes until golden brown. Start checking at 20 minutes.
1. Wisk one dozen eggs and 1/2 c milk in a bowl until well combined.
2. Heat a large skillet with nonstick cooking spray (or melt 1 Tbls butter) over medium heat.
3. Spray skillet and add egg mixture.
5. Season with salt and pepper to taste.
Tortillas:
1. Place 5-10 tortillas on a plate.
2. Cover with a wet paper towel.
3. Heat in microwave for 30 seconds at 50% power.
4. This should be your last step. Heat the tortillas in batches.
Putting it all together:
1. Set up an assembly line with all the ingredients.
2. Place the tortillas on a large baking sheet or cutting board,.
3. Build your burritos:
- cheese
- eggs
- meat
4. Fold in the sides of the tortilla.
5. Roll burrito up.
6. Pat firmly on top of the burrito making sure the seam is on the bottom.
7. Make sure the burrito is tightly rolled.
1. Line a baking sheet with parchment paper.
2. Place burritos on the sheet, seam side down.
3. Press down on the burritos again lightly making sure that the edges are tucked in.
4. Place baking sheet in the freezer for an hour to flash freeze the burritos.
5. Remove from freezer and wrap burritos in plastic wrap individually.
6. Place in a ziploc bag.
7. I ended up with 24 burritos.
To heat the burritos:
1. Remove plastic wrap.
2. Wrap burrito in wet paper towel.
3. Heat for 3 minutes on 50% power.
4. Serve with fresh salsa - yummy!
Tips:
- Want to go vegetarian? Replace the meats with some sauteed peppers and onions.
- Want bigger burritos? Just use larger tortillas.
- Need even more flavor? Add in some sauteed veggies.
- Make sure to serve with fresh salsa.

Great idea! Someone brought breakfast burritos to a pitch-in brunch and they were so good--that would be an interesting thing to try with the freezer method. You could keep some on hand and then just grab the pan and finish it up before heading out the door.

ReplyDeleteHi Jodi! You absolutely can cook all the ingredients together if you are going to make just a single type of burrito. I often will make a "hash" where I fry the potatoes and meat and then scramble the eggs in the same pan. Throw in some cheese and voila! The reason I showed the assembly line was to illustrate how you can make a variety of breakfast burritos at a time. Hope this helps and thanks for visiting Mom On Timeout!

I wrap mine in those Reynolds foil sheets and set the whole dish int he oven on 'delay bake' for mornings I dash off to work and they all sleep in. When they wake, the breakfast tacos are hot and ready. And my peeps love them! Thanks for the great recipe!

@Anonymous Oh wonderful! I actually made some myself today. My husband wanted one batch of spicy sausage, one with Italian sausage (??), and then I made one with regular sausage for the kids. I made some a couple weeks ago, and here I am back at your blog getting the recipe to make more. We LOVE them! We wrap them in a dry paper towel and cook on high for 1 minute. Turning it over at 30 seconds. To go packs of Taco Bell sauce make this easy to grab to take to work.

ReplyDeleteQuestion: If I heat it up using the oven instead of the microwave what temperature would you set it at and how long would you allow them to heat? Also I want to add veggies instead; does that make them soggy or mushy?
ReplyDeleteThe tortillas that I used I purchased at Costco. I'm not sure what brand they are but if you warm up your tortillas and keep them warm during the process, they should be very pliable and not crack. I've used several brands and not had a problem. The only thing I can think of is that maybe they are older or were heated up too much. You can also try heating them up in a damp towel, this keeps them super moist and should eliminate any cracking. I really hope this helps and Happy Easter!

What are your thoughts on adding avocado right before wrapping up? Would they get gross when you reheat? just sounded yummy :)
ReplyDeleteI would only add avocados after heating. I don't think the avocados would stand up to be frozen and then heated up very well. But yes, it does sound yummy! If you have the time just slice them up and throw them in the burrito after heating.
