Pineapple Mango Salsa

This Pineapple Mango Salsa recipe is an explosion of flavor that is perfect for dipping or serving alongside grilled seafood or chicken. A delightful blend of refreshing, juicy pineapple, sweet mango, with a hint of jalapeño all perfectly balanced with a honey lime dressing. Perfect for summer entertaining, BBQs and potlucks!

Ingredients

  • 2 cups pineapple diced
  • 1 ½ cups mango diced
  • ½ cup red bell pepper finely diced
  • cup red onion finely diced
  • cup tomatoes diced (Roma, cherry, grape, etc.)
  • ¼ cup cilantro minced
  • 1 jalapeno seeded and minced
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon honey

Instructions

  • Combine pineapple, mango, red bell pepper, red onion, tomato, cilantro, jalapeno and lime zest in a large bowl and toss gently to combine. Set aside.

  • In a small bowl, whisk together the lime juice and honey until combined.

  • Drizzle the mixture over the salsa and gently fold or toss together until evenly distributed.
  • Cover the salsa tightly plastic wrap and refrigerate until ready to serve.
  • Serve chilled with tortilla chips.
