Ingredients
Lemon Simple Syrup
1cupgranulated sugar
1cupwater
2tablespoonslemon zest
Sorbet
1 ½cupslemon simple syrup
1cupwater
½cupfreshly squeezed lemon juice
Instructions
Lemon Simple Syrup
Combine granulated sugar, water and lemon zest in a small saucepan. Stir to combine.
1 cup granulated sugar, 1 cup water, 2 tablespoons lemon zest
Let come just to a simmer over medium heat and stir for a few minutes or until sugar has dissolved. Remove pan from heat and let cool. Optionally, you can strain the mixture over a fine mesh sieve to remove lemon zest but keep in mind the sorbet will have a little less lemon flavor.
Lemon Sorbet
Whisk together the cooled lemon simple syrup, water and fresh lemon juice in a large bowl until combined.
1 ½ cups lemon simple syrup, 1 cup water, ½ cup freshly squeezed lemon juice
Transfer mixture to a shallow, freezer safe container with a lid. Cover mixture with plastic wrap and then place the lid on and freeze for 4 to 6 hours, stirring (or whisking when you can) every 30 minutes, until desired consistency is achieved. Make sure to break up any large chunks while stirring for the best consistency and results.
Serve frozen, with a slice of lemon and a fresh mint sprig. Enjoy!
