Caramel Banana Nut Muffins

Ingredients

  • 3 bananas ripe
  • 6 tbsp butter softened
  • 3/4 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 12 Kraft caramel squares cut into sixths (optional)
  • 1/2 cup pecans chopped

Instructions

  • Preheat the oven to 350 degrees.
  • Line a muffin tin with cupcake liners or lightly grease.
  • Peel and mash the bananas.
  • Stir in butter,brown sugar, egg and vanilla. Mix until well combined.
  • Combine flour and remaining dry ingredients. Set aside 1 tablespoon of flour mixture.
  • Add the dry ingredients and stir just until combined. Do not over mix.
  • Coat the caramel pieces with the reserved tablespoon of flour mixture
  • Fold in caramel pieces and chopped pecans
  • Divide batter evenly between the twelve cups.
  • Bake for 20-22 minutes or until an inserted toothpick comes out clean.
  • Let cool for several minutes before enjoying.
