Chocolate Chip Skillet Cookie

6 tbsp unsalted butter softened 1/2 cup brown sugar dark or light 1/2 cup granulated sugar 1 egg room temperature 2 tsp vanilla extract 1 cup all purpose flour 1 tbsp cornstarch 1/2 tsp baking soda 1/2 tsp kosher salt 3/4 cup semi sweet chocolate chips 1/4 cup mini chocolate chips
Preheat oven to 350F.
In a large bowl, mix butter and sugar together until combined.
Add in egg and vanilla extract and stir together until combined.
Add flour, baking soda, cornstarch and salt. Stir just until combined.
Stir in chocolate chips.
Transfer cookie dough to a 10 inch cast iron skillet and use an offset spatula to smooth the top to create an even layer of cookie dough.
Sprinkle mini chocolate chips over the top of the cookie dough.
Bake for 20 minutes or until the edges are nice and golden brown. Cool for a few minutes before cutting and serving with ice cream.
