Ingredients
8strawberries trimmedhulled, quartered
8pineapple chunksfresh is best but canned will work too
20mint leaves plus more for garnishing
1lime quartered
1/4cupsimple syrup
8ozpineapple juice
8ozlight rum
8frozen strawberries8 to 12
soda waterclub soda, lemon-lime soda
Instructions
Divide strawberries, pineapple chunks, mint leaves, and lime quarters evenly among four glasses.
Gently muddle the fruit and mint leaves until all the juice has been released from the fruit.
Add 1 tablespoon of simple syrup, 2 ounces of pineapple juice, and 2 ounce of rum to each glass. Stir together. (Optional: Strain the muddled fruit and leaves if you'd like.)
Add 2 to 3 frozen strawberries to each glass and top with club soda.
Garnish with fresh lime slices, strawberries slices, pineapple slices, and/or fresh mint sprigs.
Simple Syrup
Combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Heat over medium heat, stirring frequently until sugar has completely dissolved. Let cool before using. Store leftovers in refrigerator.
