Pineapple Strawberry Mojito

Perfectly cool, sweet, and SO refreshing, this fruit-infused Pineapple Strawberry Mojito cocktail has it all!

Ingredients

  • 8 strawberries trimmed hulled, quartered
  • 8 pineapple chunks fresh is best but canned will work too
  • 20 mint leaves plus more for garnishing
  • 1 lime quartered
  • 1/4 cup simple syrup
  • 8 oz pineapple juice
  • 8 oz light rum
  • 8 frozen strawberries 8 to 12
  • soda water club soda, lemon-lime soda

Instructions

  • Divide strawberries, pineapple chunks, mint leaves, and lime quarters evenly among four glasses.
  • Gently muddle the fruit and mint leaves until all the juice has been released from the fruit.
  • Add 1 tablespoon of simple syrup, 2 ounces of pineapple juice, and 2 ounce of rum to each glass. Stir together. (Optional: Strain the muddled fruit and leaves if you'd like.)
  • Add 2 to 3 frozen strawberries to each glass and top with club soda.
  • Garnish with fresh lime slices, strawberries slices, pineapple slices, and/or fresh mint sprigs.

Simple Syrup

  • Combine 1/2 cup sugar and 1/2 cup water in a small saucepan. Heat over medium heat, stirring frequently until sugar has completely dissolved. Let cool before using. Store leftovers in refrigerator.
