Ingredients

Step 1

In a dutch oven or large skillet with deep sides, cook the bacon over medium heat until crispy, about 8 minutes. Remove bacon with a slotted spoon and transfer to a plate. Set aside.

Step 2

Remove all but 4 tablespoons of bacon grease from the skillet. If you don't have enough, add enough extra virgin olive oil to equal 4 tablespoons.

Step 3

Add the onions and cook until translucent, stirring occasionally, about 7 to 8 minutes. Add the minced garlic and cook for one minute, stirring continuously.

Step 4

Add the chopped cabbage, brown sugar, apple cider vinegar, salt and pepper. Stir to combine and continue cooking, stirring occasionally, until cabbage is tender, about 8 to 12 minutes.

Step 5

Add the bacon and butter and stir until the butter is melted and the bacon is evenly distributed. Taste the fried cabbage and adjust seasoning if needed.
