In a dutch oven or large skillet with deep sides, cook the bacon over medium heat until crispy, about 8 minutes. Remove bacon with a slotted spoon and transfer to a plate. Set aside.
1 pound thick-cut bacon
Remove all but 4 tablespoons of bacon grease from the skillet. If you don't have enough, add enough extra virgin olive oil to equal 4 tablespoons. Add the onions and cook until translucent, stirring occasionally, about 7 to 8 minutes.

Add the minced garlic and cook for one minute, stirring continuously.

Add the chopped cabbage, brown sugar, apple cider vinegar, salt and pepper. Stir to combine and continue cooking, stirring occasionally, until cabbage is tender, about 8 to 12 minutes.

Add the bacon and butter and stir until the butter is melted and the bacon is evenly distributed.

Taste the fried cabbage and adjust seasoning if needed. Serve immediately.
