Ingredients
Apple Muffins:
⅓cupvegetable oil
1cupgranulated sugar
½cuplight brown sugarlightly packed
1egg
¾cupbuttermilk
2cupsall-purpose flour
1cuppecanschopped
1tablespooncinnamon
½teaspoonground nutmeg
½teaspoonground cloves
1teaspoonsalt
1tablespoonbaking powder
2cupscooking appleschopped (about 2 apples)
Sugar Pecan Topping:
½cuppecanschopped
⅓cupall-purpose flour
¼cupsalted buttermelted
⅓cupgranulated sugar
Instructions
Preheat oven to 350 degrees F. Line two muffin pans with liners for 16 muffins and set aside.
Apple Muffins:
In a large bowl, whisk together vegetable oil, granulated sugar, and brown sugar until combined. Whisk in egg and buttermilk until incorporated.
In a separate bowl, combine flour, pecans, cinnamon, nutmeg, cloves, salt, baking powder, and apples. Stir until combined making sure apples are fully coated in flour mixture.
Add the dry ingredients to wet ingredients and stir until just combined. Don't overmix.
Scoop batter into lined muffin tins until two thirds full.
Sugar Pecan Topping:
Make sugar pecan topping by stirring together pecans, flour, melted butter, and granulated sugar. Sprinkle topping over muffins.
Bake in oven for 25 to 30 minute or until a tester comes out clean or with a few moist crumbs.
Transfer muffins to a separate cooling rack to finish cooling.
