Ingredients
1/2cuproasted red bell pepperdiced, drained and patted dry
8ozlight cream cheesesoftened
1TblsDijon mustard
2cupsshredded cheeseany kind, I used a Mexican blend, divided
½cupParmesan cheese
1½Tblsonionminced
2clovesgarlicminced
12ozSeaPak Shrimp Scampi1 package
Instructions
Preheat oven to 350 degrees.
Spray an 8x8 inch baking dish with cooking spray and set aside.
Combine all ingredients except for the shrimp scampi and half a cup of the shredded heese in a bowl and mix until well combined. You can also beat with a mixer.
Stir in frozen shrimp scampi.
Bake for 20 minutes and stir to distribute the butter and seasonings on the shrimp scampi. Sprinkle on remaining 1/2 cup shredded cheese and return to the oven for another 10 minutes or until cheese is melted and bubbly and shrimp is cooked though.
Serve hot with crackers, baguette slices, bagel crisps, etc.
