Zucchini Pasta Salad with Sun Dried Tomatoes and Mozzarella
This delicious Zucchini Pasta Salad with Sun Dried Tomatoes and Mozzarella is a glorious combination of some of my very favorite ingredients and perfect for all your summer gatherings. Ingredients
16ozshort pasta (penne, rotini, fusilli, etc.)
12ozzucchini spirals
8 ozjar sun dried tomatoes, drained
15 ozjar marinated artichokes, drained
8 oz fresh mozzarella, drained, quartered or halved
1/2red onion, thinly sliced
1pintcherry or grape tomatoes, halved
Dressing
1/4cupextra virgin olive oil
2tbspred wine vinegar
1tbsp fresh squeezed lemon juice
1/2 tsp garlic powder
1/2tsp parsley flakes
1 tsp dried oregano
1tspDijon mustard
Instructions
Cook pasta to al dente according to package directions. Remove pasta with a slotted spoon and place in an ice bath.
Add zucchini spirals to boiling pasta water and cook for just 1 minute. Remove with a slotted spoon and place in a separate ice bath.
Combine all of the dressing ingredients in a small bowl and whisk to combine. Set aside.
Place cooled pasta in a large bowl and add cooled zucchini and remaining salad ingredients.
Toss with half of the dressing. Refrigerate for at least 2 hours. Toss with remaining dressing and serve.
