Corn Dip Recipe

This delicious Corn Dip recipe is a blend of creamy textures and bold, fresh flavors! As easy to make as it is delicious to devour, it’s the perfect addition to parties, BBQs and holiday menus.

Ingredients

  • ¾ cup sour cream
  • ¼ cup mayonnaise
  • 4 ounces cream cheese softened
  • 2 cups corn frozen, thawed or 15 ounce can, drained
  • ¼ cup red onion diced
  • ½ cup bell pepper diced - any color you like
  • 4 to 6 slices bacon cooked and crumbled (save a little for the garnish)
  • 2 tablespoons parsley chopped
  • 1 teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Garnish

  • bacon
  • parsley

Instructions

  • In a mixing bowl, combine sour cream, mayonnaise, and softened cream cheese. Blend until smooth and creamy.
    ¾ cup sour cream, ¼ cup mayonnaise, 4 ounces cream cheese
  • Gently fold in the corn, red onion, diced bell peppers, bacon and fresh parsley until it is well-distributed in the creamy mixture.
    2 cups corn, ¼ cup red onion, ½ cup bell pepper, 4 to 6 slices bacon, 2 tablespoons parsley
  • Sprinkle chili powder, garlic powder, salt, and black pepper over the mixture. Stir well to combine evenly.

  • Cover the bowl and refrigerate the dip for at least 30 minutes. This allows the ingredients to meld and intensify the flavor.
  • Before serving, give the dip a final stir. Garnish with additional crumbled bacon and fresh parsley for a delicious garnish. Enjoy!

Notes

Storage. Leftover dip should be stored in an airtight container in the refrigerator for up to 3 to 4 days. I do not recommending freezing the dip as it will alter the texture.
Make Ahead. This dip can be made a day in advance and stored in an airtight container in the refrigerator until ready to serve.
