Ingredients
Coffee Cake
1cupunsalted butterroom temperature
1cupgranulated sugar
¾cupbrown sugarcan use light or dark brown sugar
4eggsroom temperature
1tablespoonvanilla extract
3cupsall purpose flourspooned and leveled
1tablespoonbaking powder
½teaspoonsalt
½cupmilkroom temperature, I used whole milk
Apple Mixture
1½cupsapplesabout 2 apples, peeled and diced, I used Granny Smith
1 ½cupbrown sugar
8tablespoonsunsalted buttermelted
⅓cupall purpose flour
2teaspoonsground cinnamonor apple pie spice
¼teaspoonsalt
Glaze (Optional)
¾cuppowdered sugar
1 to 2tablespoonsmilk
½teaspoonvanilla extract
Instructions
Coffee Cake
Preheat oven to 350°F. Grease a 9x13 baking dish with nonstick cooking spray or butter. Set aside.
In a large bowl, cream together butter, granulated sugar and brown sugar using a stand mixer or hand mixer for about 2 to 3 minutes.
Beat in eggs one at a time until fully combined. Add in vanilla extract and mix until combined.
In a separate medium bowl, whisk together flour, baking powder, and salt. Add one-third of the flour mixture and stir to combine. Add one-third of the milk and stir to combine. Repeat twice more. Set aside.
Apple Mixture
In a large bowl, combine apples, brown sugar, melted butter, flour, cinnamon and salt. Make sure the apples are evenly coated. Set aside.
Assemble
Transfer half of the cake batter into the prepared baking dish. Top with half of the apple crumble. Spoon the remaining batter on top of the apples and finish with remaining apple crumble mixture.
Bake the coffee cake for 45 to 55 minutes or, until an inserted toothpick, comes out mostly clean, with a few moist crumbs. Let cool to room temperature.
Glaze (Optional)
Combine glaze ingredients in a small bowl and whisk together until smooth. Drizzle over room temperature coffee cake and let set up for a few minutes before serving. Enjoy!

Storage InformationLeftover coffee cake should be stored in an airtight container for up to 3 days at room temperature or in the refrigerator.To freeze, wrap the cake in plastic wrap and then aluminum foil. Place in a freezer safe ziploc bag and freeze for up to 3 months. Defrost at room temperature before serving.
