Cilantro Lime Chicken

This Cilantro Lime Chicken has incredible flavor thanks to a quick and easy marinade! The cilantro lime chicken marinade produces so much flavor and keeps the chicken wonderfully moist and outrageously delicious! This easy chicken marinade recipe is sure to become a staple in your kitchen. Great for grilling and baking!

Ingredients

  • ¼ cup cilantro minced
  • 3 tablespoons olive oil
  • 3 tablespoon lime juice about two large limes
  • 1 tablespoon taco seasoning optional
  • 1 teaspoon salt
  • 1 teaspoon pepper or lemon pepper for more flavor
  • 1 pound boneless skinless chicken breasts 3 to 4 breasts

Instructions

  • Season chicken with salt and pepper and place in a large ziploc bag.
  • Add the cilantro, olive oil, lime juice and taco seasoning. Close the bag, removing any extra air, and gently massage marinade into the chicken.
  • Marinate for at least 30 minutes and up to 2 hours in the refrigerator.
  • Prepare the grill by heating it to roughly 350-400°F.
  • Place the chicken breasts on the grill and cook on each side for 6 minutes, until the core temperature of the chicken reads 165°F.
  • Let the chicken rest for 5 minutes before serving.

Storage Information
Refrigerator: Cooked cilantro lime chicken can be stored in the refrigerator for up to 3 days in an airtight container.
Freezer: Chicken should be cooled and then transferred to an airtight, freezer safe ziploc bag and frozen for up to 2 months.
Trish’s Tip: Double the marinade and use it to baste the chicken while grilling or baking for the best flavor!
If you marinate the chicken for too long, the lime juices may toughen up the chicken. If you would like to marinate overnight, don’t add the lime juice to the marinade. Add it to the marinade 30 minutes to 2 hours before cooking the chicken.
