These easy Homemade Chicken Nuggets are crispy, tender and totally delicious! Made with a mouthwatering spice blend that will delight kids and adults alike! They’re high in protein, easy to make, and your new favorite weeknight dinner option!
2poundsboneless skinless chicken breastcut into roughly 1-inch pieces
2large eggs
2tablespoonswater
2cupsbreadcrumbs
1/4cupcorn starch
2teaspoonsgarlic powder
2teaspoonsfinely ground saltI use pink Himalayan-any kind is fine
1teaspoonground black pepper
1teaspoononion powder
1teaspoondried oregano
½teaspoonsmoked paprika
Non-stick cooking spray
Instructions
Preheat the oven to 400° F. Line 2 large baking sheets with parchment paper or foil and top with a wire rack. Spray wire racks with nonstick spray and set aside.
Whisk eggs and water together in a medium bowl. Add the chicken pieces and toss to coat. Set aside. (Optional: Toss chicken in flour before adding to the egg mixture for an extra thick breading.)
In a small bowl mix together the breadcrumbs, corn starch, garlic powder, salt, pepper, onion powder, oregano, and smoked paprika. Transfer to a large resealable plastic bag.
Remove the chicken nuggets from the bowl using tongs or a fork, allowing any excess egg mixture to drip off. Place in bag with breadcrumb mixture. (Do this in batches.) Shake to coat well.
Place the chicken nuggets on the wire racks making sure they aren’t touching.
Lightly coat the chicken nuggets with cooking spray and bake for 20 to 25 minutes or until cooked through and beginning to turn golden brown. Flip nuggets halfway through if desired.
