Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup wheat flour
  • 1 1/2 cups old-fashioned oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/8 tsp allspice
  • 1 cup butter softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup pure pumpkin not pie filling
  • 1 egg room temperature
  • 2 tsp vanilla extract
  • 1 cup walnuts
  • 1 cup raisins

Instructions

  • Combine flour, oats, baking soda and spices in a medium bowl and set aside.
  • Cream together butter and sugars until light and fluffy.
  • Beat in egg and mix until well combined.
  • Add pumpkin, egg, and vanilla and mix until well combined.
  • Slowly add in flour mixture stirring just until combined.
  • Stir in walnuts and raisins.
  • Chill dough for 1 hour.
  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Drop 1/4 cup cookie dough onto lined baking sheets and press dough down slightly with the back of a spoon. (The dough does not spread much when baking.)
  • Bake for 15-17 minutes or until just lightly browned.
  • Cool for 3-4 minutes on baking sheets before removing to wire racks to cool completely.
