5 Minute Rainbow Carrot Pecan Salad
Servings: 6 servings
- 1 cup crushed pineapple do not drain
- 1/4 cup plain Greek yogurt
- 1/4 tsp salt
- 2/3 cup raisins I use half golden, half regular
- 4 cups grated carrots
- 3/4 cup chopped toasted pecans
Combine crushed pineapple, Greek yogurt and salt in a medium bowl. Stir until completely combined.
Add in the remaining ingredients and stir again.
Refrigerate until needed.
