Fresh Lemon Juice
EASY TO MAKE
Melt butter in microwave
Whisk together sugar and eggs
Stir in lemon juice and zest
Whisk in the melted butter.
Microwave one minute. Stir.
Microwave in one minute intervals, until thick
Strain curd remove zest.
Pour curd into jars and store in the refrigerator.
Topping with Greek yogurt with a dollop makes for a great snack!
Makes the perfect filling for cakes and tarts and even donuts!
Delicious as a topping on buttermilk pancakes or even blueberry pancakes.
