Preheat the oven to 350°. Combine shredded cheeses

Mix defrosted potatoes, butter, salt, and pepper together

Stir in sour cream & 2 cups of cheese.

Melt  butter. Add onions & cook. Add garlic and continue cooking.

Sprinkle with flour & continue cooking.

Slowly whisk in chicken stock until combined then slowly add milk. Simmer.

Pour cream sauce over the potato mixture & gently fold.

Combine melted butter & cornflakes and spread over the top. Bake for 20 minutes.

Can you freeze funeral potatoes? Yes. Prepare but don’t add the topping. Cover tightly with plastic wrap & freeze for up to 3 months.
