There is something about summer that has me craving fresh, flavorful salads like no other time of year. There is such a bounty of fruits and vegetables readily available during this time and I want to enjoy each and every one.

This particular salad is one of my favorites – especially for summer. I took my favorite pineapple salsa recipe, turned down the heat, made the cucumber and pineapple pieces larger and voila – the most refreshing, flavorful salad EVER.

I absolutely adore how the bright yellow of the pineapple contrasts so beautifully with the deep, dark green of the cucumber, cilantro, and lime zest. These pictures really do not do it justice.

Ingredients

  • 1 pineapple chopped
  • 1 English cucumber chopped
  • 2 limes zested and juiced
  • ⅓ cup cilantro roughly chopped
  • salt and pepper optional

Instructions

  • Combine all ingredients and toss lightly to distribute the lime juice and zest evenly.
  • Season with salt and pepper if desired.
  • Serve immediately or keep chilled until ready to serve.

    I have made this (whole30 compliant!) salad many times since I’ve pinned it and, even though I didn’t wait until summer, it has been delicious through FALL & WINTER! (It’s going to rock my summer!) It’s so refreshing and will compliment a savory meal perfectly with its sweet and slightly exotic? taste. My husband and daughter aren’t a fan, but everyone else who has tried it, (sons/friends) love it. I ALWAYS use FRESH everything in this recipe! (English cucumber is best, but I’ve used both & peel it in stripes so that only partial skin remains- no seeds though! Lastly, go light on the FRESH cilantro- you can always add more. The shelf life is short as the pineapple weeps by the end of day two or three, so it truly is best the day you make it. Thanks for sharing this lovely salad! I’ll be making it soon! THANKS TRISH!

    I use the unpeeled baby Persian cucumbers for this, cut everything small and use it as a salsa alternative for tacos.. It’s great! I wouldn’t use canned pineapple for it.

    This sounds so delicious! I don’t care for the taste of cilantro, so is there anything I could use instead like maybe some parsley? I use parsley all the time because I think it gives a refreshing taste to a recipe.

    I just made this salad except that instead of cilantro I used fresh mint and I added organic extra virgin coconut oil…. IT. TASTES. AMAZING.
