Easy to prepare Homemade Potato Herb Wheat Rolls are a delicious addition to any meal!
I am incredibly lucky to have a very special aunt in my life. My Aunt Judie has always been like a second mother to me and after my Mom passed away five years ago, that role has become increasingly important to me. She never fails to make me laugh and is always there to help me out. Last week she came to my house to CLEAN.MY.BLINDS. Yes.  That is dedication…and LOVE my friends! I’m much more of a big picture person {meaning blinds are not really high up on my to-do list…} and she is very, VERY detail-oriented. Love that about her!
She tackled the windows in my new Mom Cave with gusto, cleaning each individual slat, removing screens, and washing the windows inside and out. They now SPARKLE! And, even more awesome, we were able to spend the whole day together chatting and visiting. It was great! She stayed for dinner and my Dad came over after work. I made Chicken Cordon Bleu at my Dad’s request and thought I’d whip up some rolls while I was it.
I got out my recipe and started to pull out ingredients only to find that I was completely out of all-purpose flour! I seriously do not even know how that happened – I mean, I usually have two or three extra 5-lb bags lying around. I was stunned for a few minutes and then realized I had whole wheat flour on hand and so I came up with a new recipe and it was just FABULOUS! The smell of these rolls baking was pure heaven! My Aunt took a little break to come over and sample a fresh roll before dinner and so did the boys. Two thumbs up from everyone! I had to stop the boys from snacking on the rolls so we’d have enough for dinner 🙂
There is just something about wheat rolls that is just so satisfying. There is just more texture and substance and FLAVOR. Reece inhaled three rolls at dinner. He would split his roll in half and then smear on a good tablespoon of butter. He was in heaven! Bryce of course followed suit and I sat and watched them amazed at how oblivious they were to all those calories…. Ahh to be four again!
Easy Potato Herb Wheat Rolls
Ingredients
- 2 1/4 tsp active dry yeast 1 packet
- 2/3 cup warm water divided
- 1/3 cup shortening
- 1/3 cup sugar
- 1/2 cup mashed potatoes no milk or butter added
- 1 egg
- 1 tsp Italian seasoning
- 1 1/4 tsp salt
- 3 to 3 1/2 cups whole wheat flour
Instructions
- Dissolve yeast in 1/3 cup warm water in a small bowl.
- Cream sugar and shortening in a large bowl until light and fluffy.
- Add potatoes, egg, yeast mixture, Italian seasoning, salt, 1/3 cup water and 1-1/2 cups of flour and beat until smooth.
- Continue adding remaining flour until a nice soft dough is formed.
- Shape dough into a ball without kneading and place in a greased bowl.
- Turn dough over in bowl to grease the top.
- Cover bowl and let dough rise until almost doubled, approximately one hour.
- Grease a 9x13 baking dish.
- Divide dough in half and shape each half into 7-8 balls for a total of 15 rolls.
- Place rolls in baking dish, cover, and let rise for another 30-45 minutes.
- Bake at 375 for 20 minutes or until golden brown.
- Remove from baking dish and let cool on wire rack.
- Yields 15 rolls.
