Summer is here you guys. It is BLAZING hot here in Sacramento. So hot in fact that we escaped to Monterey the past few days just to get a reprieve from the heat. That, and my Reece had a hard core craving for clam chowder 🙂
Before we left, we were stuck indoors for days because it was unhealthy to be outside. Yeah, that hot.
The boys were inhaling ice cream right and left and I was trying very hard to limit myself to a single Weight Watchers® GIANT Chocolate Fudge Ice Cream Bar a day (just 90 calories!). Very, very hard. I had a stash of the ones I made last week that were dipped in that dark chocolate magic shell and well, irresistible is the word that comes to mind…
On day four of the heat wave, I decided to mix things up a bit and make a mug cake…with ice cream. Lordy was that the best idea ever. I was dreaming of chocolate cake but the idea of turning on the oven was frightening…the house was hot enough already. Mug cakes are always a good idea and when they’re made with ice cream…mmmm.
I started with one ice cream bar and let it melt…that took two seconds outside. I only wish I was kidding. I stirred in a little cake flour (AP flour also works!) and a bit of baking powder. You guys, I used the wooden stick from the ice cream bar to stir it in…GENIUS.
And then because my middle name rhymes with chocolate (no, not really), I stirred in some mini chocolate chips.
Off to the microwave for a whopping 90 seconds and voila – cake!
I topped my Chocolate Ice Cream Mug Cake with a bit of lightly sweetened whipped cream (fat free whipped topping would be awesomesauce as well), a few raspberries, the mini chocolate chips that accidentally spilled out of the bag (why does that always happen?) and my new favorite afternoon treat was born.
I did a quick count of remaining ice cream bars and the good news is I won’t have to leave my house for another 5 days before I need to stock up at Safeway again and by then the temperature will have cooled…slightly 🙂

Chocolate Ice Cream Mug Cake
Ingredients
- 1 Weight Watchers® GIANT Chocolate Fudge Ice Cream Bar melted (about 1/3 cup)
- 2 tbsp cake flour AP works too
- 1/4 tsp baking powder
- 1 tbsp mini chocolate chips
Instructions
- Combine melted ice cream, flour, and baking powder in a microwave safe mug.
- Stir in mini chocolate chips.
- Microwave on high heat for 90 seconds or until top appears dry.
- Top with whipped cream, raspberries, and mini chocolate chips.
