The other day Reece was talking to me about what he wanted to be when he grew up. The conversation went something like this:

Reece: I know what I want to be when I grow up!

Me: Oh yeah? What’s that?

Reece: I want to be an engineer. But not like an engineer like you and daddy. I want to be a real engineer – a TRAIN engineer.

Me: Wow! That would be cool!

Reece: Yeah. And I wouldn’t need to learn that much because I already know A LOT about trains. I mean, I’ve watched the Polar Express like at least 100 times.

Me:  That’s true….

As much as I think I know about cooking, I’m always looking for new, creative, delicious, and FAST dinner options for our family. Sure, I’m a stay-at-home mom BUT I also work from home which can get a tad tricky from time to time. No matter how much time I think I have there never seems to be enough when it comes to dinner.

Chris gets home between 5:30 and 5:45 every night. Soccer practice starts at 6. And it’s not next door. Anyone else doing the math here?

Yep. Not only do we need fast meals, we need to be able to eat them quickly and sometimes, eat them on the run 🙂

Chicken Cordon Bleu Crescent Rolls make dinner easy and your family happy! | MomOnTimeout.com

I am officially a super-fan of this recipe and plan on making as many variations as my creativity allows for in the future. These rolls were gobbled up SO fast and I didn’t hear any complaints. That’s rare.

I made a honey-dijon sauce for the adults that also doubled as a quick salad dressing. YUM. I roasted up a couple chicken breasts real quick but you could easily substitute Rotisserie Chicken and it would be even easier. The trick is making sure you slice the chicken thinly enough that it’s nice and flexible and rolls well.

You make these just like cinnamon rolls using Pillsbury Crescent Rolls for the base. I layered on cheese, ham, and chicken and then rolled it up. Cut ’em, bake ’em, eat ’em! Dinner is served!

This delicious and easy recipe is one of several that inspired my new book 100 Creative Ways to Use Rotisserie Chicken in Everyday Meals. I love using rotisserie chicken to create meals that my family will love! You’ll find casseroles, bakes, comfort food, soups, sandwiches and more!

I have an entire chapter devoted to meals you can can create in 20 minutes or less and another devoted to recipes with 5 ingredients or less. This cookbook is filled with simple and fast recipes that your whole family will love.  Check it out!

Sounds like you didn’t bake them long enough? Or maybe your pan was a little too small. There should be some space between the rolls before going into the oven. Hope that helps!

These were great. The only problem was that it took 30 minutes to fully cook. I took them out at 19 min and the bottom edge was still raw dough.
PS. I have found and come to love crescent roll dough in a sheet so you don’t have to press together the seem (found at Wal-Mart & Publix).

These were super easy and delicious. The boys gobbled them up. We like spicy so I added just a tad – and I mean a tad – of horseradish to the honey-dijon sauce. Will definitely make these again and will try omitting the Italian seasoning and replacing it with sliced pepperoncini. I like the idea of using different meats, cheeses, veggies, etc. Thanks for the recipe!

Hubby and I came across this recipe a few days ago and I knew we had to try it. Of course, living in an isolated town in the arctic means having to change things up a bit, especially as there were no crecent rolls in town! No worries – we whipped up a quick pie crust and made tarts. I filled them with cooked chicken and some left over ham and then drizzled the honey mustard sauce on before topping with some Swiss cheese. Oh my they were YUMMY! Thanks for the inspiration!!

I used the Swiss cheese and used thick slices of ham from the deli counter, Boars Head rosemary and thyme ham. Then added pickle spears. My dad always did that to his cordon bleu and so I do it. Thanks for the recipe. It is delish!! Definitely going into the weekly rotation. 🙂

Your conversation with Reece just got me thinking – I’ve never actually been on a “real” train. A bazillion subways, but that’s just not the same. By the time I finally do, I’ll have to ask who the engineer is… could be Reece. 😉 Funny, I pinned a post last night and was just coming back to read some and noticed that we both posted Chicken Cordon Bleu dishes. Although I poached the chicken for mine, I also pointed out one of my favorite “cheat” … using a rotisserie chicken. Weird that they’re usually cheaper than buying and cooking your own too. Hi Trish,

l made this recipe today for Sunday brunch for my family. They were delicious! l didn’t leave space between my pinwheels to allow them to expand, rise and bake. Because l didn’t do this, they took much longer to bake and were a little doughy inside. The next time l make them (…and there will definitely be a next time) l will know better. Learn from my mistakes people 🙂

So I have never made cinnamon rolls using cresent. When you say in your instructions to roll it like a cinnamon roll which side are you suppose to roll from. One of the ends or the sides? I’m making them now and was looking at your pics and I think if did them wrong. I don’t know it it matters or not. But I just thought it would have been useful info if it does. 🙂 So I guess we will see how these puppies turn out. I think they will be a hot mess since they seem more open then yours. The cheese will probably be all over the place rarer than in the roll itself. Haha. Oh well, it all goes down the same way right?

YUM!!! I just love all the things you can roll up into crescent rolls 🙂 And I am laughing at your comment about your hubby thinking you were trying to feed him vegetarian meals.

I’m so making these…or a version (not huge into Swiss cheese…I’m weird). For some reason I have a few packs of crescent rolls in the refrigerator and haven’t decided what to do with them. I love this idea. Thanks!

SUCH a good idea – we don’t have much time for weeknight dinners either, so I’m always on the lookout for meal ideas like this. LOVE crescent rolls!

These look great! I made something similar for our Christmas Eve hors d’oeuvres, although they were quite filling. I used Pillsbury Pizza dough, swiss, deli ham & turkey. They were amazing! They had a brown sugar & Dijon mustard glaze poured over them prior to baking. Next time I would cut down on the brown sugar and add more mustard. A tad too sweet for my taste, but delicious nonetheless.
